Tens of thousands of kilos of apples produce quite a bit of pomace after pressing. As soon as it is removed from the press, the pomace is added to windrows for composting. We add woodshavings and hay to improve aeration and turn the piles every few weeks. It's a slow way to make compost, but after a year we have a friable crumble full of worms which we put back under the trees (and into our vege garden).
