Foxwhelp is one of the oldest cider varieties, but is now rarely grown. This apple is mouth-puckeringly tannic and acid, and time is needed to tame this beast. In the eighteenth century a barrel of aged Foxwhelp cider was worth the same as a barrel of fine French wine.
This is our tribute to the Foxwhelp. Two years in barrel have created a cider that is crisp, bone dry, full of oak and fruit.
