We strive to make cider with integrity, without compromise, with no short cuts, and with minimal intervention.
Our ciders are made from 100% fresh juice, and are made only in autumn with tree ripened fruit. We take our time, slow fermenting and ageing our ciders for between ten and eighteen months.
Once harvested, our fruit is milled and pressed into rich, intensely aromatic, cider juice. Each type of apple has specific characteristics, and varieties are carefully blended to yield the appropriate acidity levels and balanced tannins. A few varieties are well balanced enough to make “single variety” (SV) ciders.
