Once picked, fruit is shed stored for as long as possible to convert any remaining starches into sugar and flavour. At the cidery the fruit is washed, graded (we only use good clean fruit), milled and then pumped into our pneumatic press - for some smaller batches we still use our trusty rack and cloth press.
